At its heart, Aeropuerto combines two Chifa favorites: fried rice (arroz chaufa) and stir-fried noodles (tallarín saltado). Another popular story links the name to eateries located near Lima's Jorge Chávez International Airport, although the former explanation is generally regarded as the better-supported interpretation.
